After living in Germany for so long you betcha I found the best pretzel in Germany. Unfortunely, of course, pretzels are made out of gluten and well obviously that just does not work with a ketogenic lifestyle. I then set out to find a keto approved pretzel. This pretzel by no means tastes like a traditional German Lucksheiter pretzel but heck it tastes good and that's what counts in the end.
Ingredients:
- 1/2 cup (56g) coconut flour
- 1/2 cup (48g) almond flour
- 2 eggs
- 1 cup (112g) shredded mozzarella cheese
- 3 tablespoon (21g) softened cream cheese
- pinch of salt
Toppings:
- 1 tablespoon (14g) melted butter or enough to coat
- sea salt to taste
Preheat oven to 375F (190C). Heat mozzarella and cream cheese in the microwave or on the stove until they melt together. Add the almond flour, coconut flour and salt. Stir until the mixture has a dough like consistency. Roll the dough out on some parchment papier and form into pretzels. Brush on the butter and sprinkle with salt. Bake for 12 minutes and broil for another 3 minutes.
