Super easy, super fast keto french toast. Breakfast is my favorite meal of the day and when I first started my ketogenic journey, I struggled with finding a variety of breakfast foods. This made breakfast, for me, not as enjoyable. I mean what was there other then eggs and yogurt? So I set out on a mission to expand my breakfast "portfoilio" if you will. I came up with some great meals I have incorporated daily because they are easy as well as very enjoyable. Breakfast is yet again my favorite meal of the day. Hooray!
Ingredients:
90 second "toast":
- 1 tablespoon (7g) coconut flour
- 1 1/4 tablespoon (17g) butter melted
- 1 egg
- 1 teaspoon (2g) cream cheese
- 1/4 teaspoon (1g) baking powder
- 1/4 teaspoon (.5g) cinnamon
- pinch of nutmeg
For the french toast:
- 1 egg
- 1/4 cup (56g) heavy whipping cream
- 1/4 teaspoon (.7g) (erythritol or other granual sweetener
Melt the butter in a pan on the stove or in the microwave. Add the rest of the ingredients, making sure not to cook the egg in the butter. Cook in the microwave for 90 seconds
