This bread is awesome, truly, it was so easy to make and it turned out great. Tasting just like a pizza bread, I can't wait to try more things with this new recipe. Possibly a sweet variety?
Ingredients:
- 1/4 cup (18g) flaxseeds
- 1 cup (112g) mozzarella
- 1 cup (48g) almond flour
- 1 egg
- 1/2 teaspoon (3g) baking soda
- 2 tablespoon (15g or 1oz) cream cheese
- 1/2 teaspoon (1g) oregano (optional)*
- 1/2 teaspoon (2g) salt(optional)*
Preheat oven to 400F (204C). Line a baking sheet with parchment paper. In a medium bowl, melt cream cheese and mozzarella together until smooth. Stir in egg until combined. Next, stir in almond flour, flax seeds, and baking soda. My dough was very sticky so I was unable to "roll" mine into balls. I just made them into ball forms and they came out flatter than puffy but still delicious. Bake for 12-15 minutes.
You can use them as bread making sandwiches, melting cheese on them, spreading butter, cream cheese or other things on them too. Use your imagination and add different sweet or savory herbs and spices.
To make this recipe into a pizza crust, follow recipe above but instead of rolling dough into individual balls, grease a pie pan or baking sheet then make dough into one big pizza shape. Bake in oven for 15 minutes then place on broil for 2 minutes, watching carefully because it goes fast, until it is browned.
Once browned, remove from oven to let cool before adding your pizza toppings. Once cooled, add toppings and place back in the oven on 400F (204C) for another 5-10 minutes depending on what you add.
I bake my pizza with its toppings for 5-10 minutes on 400F (204C) then broil it (550F 287C) for another 2-3 minutes to really melt and brown the cheese but I use toppings that don't need to be cooked. If your toppings need to be cooked, I would pre-cook them then follow the baking directions above.
