My all time favorite meal is chili con carne. Again, tomatoes are another one of those vegetables that one shouldn't be eating too much of. This is because of the high fructose content and the fact that they are a nightshade. Personally, I make sure to avoid this vegetable for months at a time making sure not to overwhelm my gut when I do decide to have the odd tomatoe dish. Not to sway you away from eating this truly delicious dish, just something to be aware of before eating your next meal with tomatoes.
Just because you can, doesn't mean you should, always over indulge.
Ingredients:
- 1 big garlic clove
- 4 mushrooms
- half a zucchini
- 6 cups (642g) cauliflower
- 1 1/3 cup (300g) ground beef
- 1 1/2 cup (360g) beef bone broth
- 1 cup (225g) tomato sauce
- 2 cups (400g) can of tomato chuncks
Spices:
- basil, rosmary, paprika, cumin, chili, garlic, oregano, salt, pepper.
I love using spices as much as I can get my hands on and the fresher the better!
Feel free to cook this meal how ever you would like to. I cooked it a bit unconventionally because frankly that's how I cook. I am no master chef, I just learn by doing and in this case, as with most, I threw everything together and let it simmer on medium for 2 hours. Let all those delicious aromas, herbs and spices blend.
It's okay to add more or have less vegetables as the consistency of the chili is completely up to you. Also, if you would like to add something new go for it! I like being creative and therefore hardly ever messure the food amounts that go into my dishes. So relax and have fun.
