I think bread is arguably one of the most sought after foods while on the keto diet. I always get asked from my friends and family members, "Don't you miss bread"? Or, "Don't you miss the smell of bread"? Honestly, I never was a big fan of bread. I was always a fan of everything on the bread and just figured I had to eat the bread as well. When I first heard of keto and how you leave the bread out, my eyes immediately lit up like, "I can eat JUST the good stuff"??? With that said, I do still like having the odd piece and lets face it "bread" sure helps to eat a sandwich.
This almond bread is so delicious with a great consistancy for sandwiches, french toast or even a good ol peanut butter toast just fry the bread with some butter in a pan and lather on that peanut butter, Yumm!
Ingredients
- 1/2 cup (100g) butter melted
- 2 tablespoons (30g) coconut oil
- 2 cups (200g) almond flour
- 1/4 cup (34g) hemp flour
- 7 eggs
- 1 teaspoon (5g) baking powder
- 1/2 teaspoon (2g) xanthan gum
- 1/2 teaspoon (2g) salt
Preheat oven to 355F (180C). Melt butter and coconut oil in a small dish and in another bowl beat eggs on high for 2 minutes. Add the butter and coconut oil into the eggs and mix in the remaining ingredients. Pour mixture into a greased loaf pan or line with baking paper. Bake for 45 minutes or until tooth pick comes out clean. Let cool, slice and serve!
You could easily add vanilla, cinnamon or some dark chocolate to make this loaf sweet. Likewise, you could add herbs and spices to make it savory. I enjoyed using the slices for my delicious french toast recipe
