The thing about a keto lifestyle is that you're always eating clean and healthy. Therefore when it comes to desserts there really are no boundaries. So why not have that piece of cake or pie for breakfast? Keto is about feeding your body healthy, nutrient dense, fatty foods and when we aren't loading our desserts with the harmful sugar and gluten, then we have more room for the good stuff. Ingredients such as butter, coconut oil, nuts, berries and fun spices like cardamom, nutmeg, cinnamon, maca powder, ginger and more.
Another reason I love eating keto, because I don't have to feel guilty, just great!
Ingredients:
- 1/2 cup (56g) coconut flour
- 5 eggs
- 1/4 cup (50g) erythritol
- 1/2 cup (112g) butter melted
- 1 tablespoon (5g) lemon juice
- 1/2 teaspoon (1g) lemon zest
- 1/2 teaspoon (1g) xanthan gum
- 1/2 teaspoon (.5g) salt
Cream topping:
- 1/2 cup (60g) goat cream cheese (or regular cream cheese)
- 1/2 cup (144g) goat yogurt (or plain yogurt (122g))
- 1 teaspoon (4g) vanilla
- 1/2 teaspoon (1g) lemon zest
Separate the egg yolk from egg whites and beat the egg whites until they form peaks. (You may want to do this with a blender or mixer as by hand can be tough) Once peaks have formed mix in the rest of the ingredients until well combined. Pour ino a greased loaf pan. Bake at 355F (180C) for 45 minutes (fan forced). While the cake is in the oven, whip together the cream cheese, yogurt, vanilla and lemon zest until you form a nice cream topping. Once the loaf is done, let cool for a couple minutes before applying your cream topping.
